No-Bake Bird Nest Cookies (candy version)

Although we don’t celebrate Easter, Liv & Sawyer learned about the holiday through Peppa Pig’s Easter egg hunt, and once they saw chocolate was involved, they begged me to join in on the festivities 😂.

These no-bake nests taste like oatmeal raisin cookies and are naturally sweetened by dates. We used coconut flour, making it a grain free and gluten free treat. Oh, and for all those celebrating Passover, this works for that holiday too (as long as peanut butter is part of your tradition)! Cookies bring us all together✌️

Hearty Dill Vegetable Soup

Dill is by far my favorite herb to add to soups and salads. It has a wonderfully fresh, citrus-like taste and is rich in antioxidants and vitamins. We begin by caramelizing onions and garlic until golden. Added to the pot are protein rich chickpeas, vitamin packed celery, and sweet carrots. To bring it all together, I add vegetable broth and alllllll the dill! Something about dill and carrots in a soup always gets me warm and fuzzy inside… it’s a wonderfully comforting dish that will please even the kids (Sawyer couldn’t get enough!). A great soup for your Thanksgiving table!
