Rice Crispy Hamantaschen

Inspired by @eatingbyelaine and her No-Bake Vegan Almond Butter Brown Rice Crispy Treats.

Ingredients
 3 cups brown rice crisp cereal
 1 cup almond butter
 ⅓ cup pure maple syrup
 2 tbsp coconut oil
 ½ tsp vanilla extract
 ¼ tsp salt
Chocolate Center
 1 cups chocolate chipsMelt with 1 tsp coconut oil

Line a baking sheet with parchment paper.

In a mixing bowl, combine all ingredients except for the chocolate coating and mix well (we used our electric mixer). Freeze for 10+ minutes.

With slightly wet hands (so the mixture doesn't stick to you), shape the batter into triangles and leave a dent with your thumb in the middle. Place on the parchment paper.

Using a spoon, put a dollop of melted chocolate in the center and spread it out to fill the triangular center. Drizzle chocolate all over the rice crispy and freeze for 10+ minutes until the chocolate hardens. Enjoy!

** Store in freezer so the rice crispy retains its shape and doesn't crumble.
