This warm flavorful autumn side dish is a great addition to any weeknight meal or Thanksgiving dinner. Made with cinnamon roasted butternut squash, honey glazed apples, warm feta, and toasted pecans, this side dish is creamy, sweet, and addicting.

40 oz cubed butternut squash
1 (8-oz) block of feta cheese, roughly chopped
2 apples, peeled and cubed
1 onion, chopped
¼ cup chopped pecans
4 tbsp avocado oil, divided
2 tbsp honey
2 tsp cinnamon
1 tsp ground sage
½ tsp salt

Preheat oven to 425. In a lined baking sheet, toss butternut squash with 3 tbsp avocado oil, cinnamon, and salt. Bake for 45 min to an hour, or until squash is tender and caramelized.

In a large skillet, heat 1 tbsp avocado oil and sauté the onions and apples until caramelized. Add in the pecans, feta, honey, and sage, and mix well.

Combine the butternut squash with the apple mixture and toss gently. Enjoy!
