It’s such a wonderful way to start a chilly morning, all snuggled up to this cozy make ahead breakfast that’ll keep you satisfied for hours.

Dry Ingredients
½ cup organic carrots, shredded
3 tbsp raisins
1 tbsp chia seeds
1 tsp cinnamon
¼ tsp allspice
Wet Ingredients
1 (5.3 oz) cup vanilla bean coconut milk yogurt (we use Co Yo Vanilla Bean Coconut Yogurt Alternative from Whole Foods) - reserve just a bit for the topping the next dayGreek yogurt works well, too
½ cup unsweetened oat or almond milk
2 tsp honey (we used Wedderspoon manuka honey)We use Wedderspoon Manuka Honey because manuka honey has so many beneficial holistic properties. On their website http://www.wedderspoon.com, use code LIVLAUGHCOOK for 10% off any of their honey products! 1 tsp vanilla extract
Frosting
Vanilla bean coconut milk yogurt (we use Co Yo Vanilla Bean Coconut Yogurt Alternative from Whole Foods) Greek yogurt works well, too
Sprinkle of cinnamon
Sprinkle of brown coconut sugar
1In a small bowl, combine all dry ingredients, and then pour into to a mason jar.
2Add in all wet ingredients.
3Stir to combine all ingredients so they're evenly dispersed and seal the jar with a lid. Store in the refrigerator overnight.
4When ready to eat, combine the frosting ingredients together and brush over the top of the oat mixture.
