Chocolate Covered Banana Pops

These no-bake frozen chocolate covered banana pops are a fun snack activity to make with your children that build confidence in the kitchen and serve as a great bonding experience. Loaded with potassium, antioxidants, and a good source of Vitamin C, these pops are easy to make and so delicious! We used chocolate sweetened by coconut sugar and let the kids use their creativity with the toppings. Once these frozen treats defrost a bit, the inside is smooth and creamy! Perfect for a warm summer day.

 2 bananas (makes 4 pops)Should have some spots, but still be firm
 ½ cup chocolate gemsWe use chocolate sweetened by coconut sugar
 1 tsp liquid coconut oil
Additional Toppings
 Dye-free sprinkles
 Drizzle of peanut butter
 Chopped fresh strawberries

Peel your bananas and cut in half. Push a cake pop stick through the bottom so half the stick remains for you to hold.

Line a baking sheet with parchment paper, and place your bananas on it.

In a double boiler, melt your chocolate and coconut oil together on low heat, stirring constantly and ensuring they don't burn.

Dunk your bananas in the chocolate or drizzle it on top.

Decorate with any additional toppings, and freeze for 2+ hours. Enjoy!
