Packed with the tropical flavors of pineapple, bananas, and coconut milk, with a touch of pure maple syrup, these popsicles are a sweet reminder of our island adventures. ๐๏ธ๐
Popsicle Ingredients
1 lb frozen pineapples
2 frozen bananas
½ cup coconut creamIf you have canned coconut milk, you can chill it for 24 hours and just use the top portion coconut cream that rises to the top.
1 tbsp pure maple syrup
Granola Ingredients (can also use store-bought)
½ cup coconut creamFor dipping
1 cup almond flour
2 tbsp pure maple syrup
½ tsp cinnamon
Pinch of salt
1In a high speed blender, add all the popsicle ingredients and blend until smooth.
2Pour into popsicle molds and freeze for 24 hours.
3Line a baking sheet with parchment paper. Toss together granola ingredients and spread evenly on the baking sheet. Bake for 8 minutes at 350F. Let it cool.
4Once frozen, remove the popsicles from their molds and dip in coconut cream, and then sprinkle with granola. Enjoy!
