Summer

(One Ingredient) Fruit Snow ConesIf you look at the ingredients of a classic snow cone, they’re pretty cringy. Not only is there a boat load of sugar, but the amount of synthetic food dye is mind boggling. Let’s normalize real food. That’s where we come in 😉. 🍧 These ONE INGREDIENT fruit cones are made with just fruit. No added sweeteners, no added junk. While you can use a hand grater too, this mama’s got no time or patience, so I used my electric grater. My kids wanted a red, white, and blue effect for Fourth of July, so we settled on strawberries, pineapple, and wild blueberries.
Coconut Water Fruit PopsThese 3-ingredient popsicles are perfect for a Fourth of July treat or summertime snack. So simple to make, my kids are amazed that these star shaped popsicles are see-through and I love how hydrating and nutritious they are!
Carrot Cake DonutsThese donuts are soft, moist, and bursting with the warm, spiced flavors of classic carrot cake, featuring hints of cinnamon and nutmeg, and topped with a rich and tangy cream cheese frosting. Made with just a handful of ingredients, they are both refined sugar-free and gluten-free. Even my daughter, who’s a self-proclaimed carrot hater, loves these donuts! ☀️ This fun and easy recipe will not only keep your kids busy during summer vacation but also give them confidence in the kitchen as they learn to measure, pour, mix, and frosting the donuts.
Strawberry Shortcake PopsMade with creamy strawberries and coconut cream, this healthier version of the classic is coated in white chocolate and covered in freeze dried fruit and gluten-free cookie crumbs. Introducing you to your new summertime favorite bar.
Parmesan Tomato Burst SalmonThis one pot salmon dish focuses on summer tomatoes bursting with flavor that’s enhanced by dill, parsley, garlic, and Parmesan. My daughter Liv hates salmon but she loves this dish. Oh, and it takes less than 20 min to make 🤩
Tofu Veggie SkewersTo make these 5 ingredient tofu veggie skewers all you need is tofu, a bell pepper, zucchini, onion, and a clean ingredient bottled marinade. You can change up the sauce each time so it never gets old… we’ve done teriyaki, pesto, and Italian. The veggies can also vary depending on what you have in the fridge that week… mushrooms work great too! This meal is the perfect way to expose your kids to new flavors and veggies, and is an easy way to get them involved in the meal prep process.

Patriotic Banana PopsLet’s make red, white, and blueberry banana pops for Memorial Day! Did you know that when frozen, bananas become creamy like ice cream? These pops are a healthy way to sneak in a fruit and couldn’t be easier to make. They’re also a great way to use up those bananas that have been sitting on your counter all week!
Fruit ConesReady for an easy patriotic treat? These warm weather treats are a great alternative to ice cream when you want something refreshing but without the sugar crash. 🍦 Filled with fresh berries and Greek yogurt, this snack is packed with protein, healthy fat, and fiber to keep your kids’ bellies satisfied for longer. It’s also a great snack activity for the kids to dip their cones in chocolate and decorate with sprinkles. A win for both mom and child!
Loaded Raspberry PopsThese FOUR ingredient pops come together in minutes and have crave-worthy layers made of indulgent chocolate, fresh juicy raspberries, protein- rich creamy peanut butter, and calcium rich Greek yogurt. My kids love when I make this for an after-school snack because they're so delicious and everything is more fun on a popsicle stick!
Chocolate Eclair PopsThese copy-cat ice cream popsicles from my childhood have a new fresh and cleaner look! Kick that artificial flavor and corn syrup to the curb (alongside the other 35+ ingredients… yup, I counted) and make these instead! Made with coconut milk, cashews, and cocoa powder as the base, we used ingredients even my 5 year old could understand. Trust me, you need to try these!
Dole Whip CreamsiclesBringing the taste of Hawaii home! 🍍🌺 Our homemade popsicles, inspired by the delicious Dole Whip and pineapple treats from our summer visit to the Dole Plantation, are now a family favorite.
