Tofu Veggie Skewers

To make these 5 ingredient tofu veggie skewers all you need is tofu, a bell pepper, zucchini, onion, and a clean ingredient bottled marinade.

You can change up the sauce each time so it never gets old… we’ve done teriyaki, pesto, and Italian. The veggies can also vary depending on what you have in the fridge that week… mushrooms work great too!

This meal is the perfect way to expose your kids to new flavors and veggies, and is an easy way to get them involved in the meal prep process.

 1 (18-oz) package Organic Extra Firm Tofu
 1-2 bell peppers
 1 onion
 1-2 zucchini
 1 (8.5 oz) clean-ingredient bottled marinade (we used Primal Kitchen Organic No Soy Teriyaki Sauce)

Preheat the BBQ grill to medium heat.

Prepare the Tofu: Cut and slice tofu into 1' cubes. Wrap in cloth with heavy item on top (we use the cutting board) for 15 min to squeeze out extra liquid.

Roughly chop your bell peppers, onion, and zucchini.

Place your tofu and veggies in a pyrex bowl and pour a bottle of marinade over it. Mix to combine and let it sit for 15+ minutes.

Take a skewer and layer the veggies and tofu on top of each other onto the skewer in a pattern. Repeat with multiple skewers.

Place on a BBQ grill over medium heat. Grill for around 15 minutes making sure to turn them a few times throughout the grilling time. Halfway through, we brushed more of the marinade on top and continued cooking. The skewers are ready when the tofu and veggies have a slight char. Enjoy!
