Remove the salmon from the refrigerator and let sit at room temp for 10 min.
Preheat BBQ to 375F. Line a baking sheet with tin foil and coat with baking spray.
Lay a few pieces of dill and parsley down the middle. Cut the lemon into thin slices, and lay half down the middle. Place your salmon on top.
Drizzle melted butter on the salmon as well as salt & pepper. Place garlic all over the top of the salmon and cover with more dill, parsley, and the remaining lemon slices.
Fold the aluminum foil up and over the top of the salmon to enclose it. Slide the packet on to the grill. and close the cover. Grill for 15 minutes or until the salmon is almost cooked through.
Open the foil so the fish is uncovered and close the grill again, cooking for another 3 minutes until completely cooked through.
Remove from grill. Sprinkle with some chopped dill and parsley, and extra lemon juice if desired. Enoy!

Can ghee be substituted for the melted butter? Also, is it safe to cook with aluminum foil? I’m hoping so because I really love cooking fish in foil packets on the grill like this recipe.
Absolutely you can sub in ghee! Also I looked up alternatives to aluminum foil in general and found this to be helpful: If you need to cover something in the oven you can use a baking sheet, metal lid, parchment paper, silicone lid, or a silicone mat instead of aluminum foil.
