One of my sneaky mom hacks involves hiding spinach in various foods. We've done breakfast muffins, smoothie snacks, and now I've moved on to dinner! The beautiful thing about spinach is that its flavor is so mild that no one ever knows it's there! My husband thinks it's just part of the Italian seasoning I put in the breadcrumbs like parsley, but I know that I'm actually giving my family vitamins & nutrients that my picky eaters would never eat on their own. MOM WIN!

In a bowl, add your eggs and beat lightly. Add in chicken strips to coat.
In a small bowl, combine breadcrumbs with all spices and chopped spinach. Lay spice mixture out on a flat plate.
Heat a large skillet on low flame. Add avocado oil to coat.
Dip egg-battered chicken strips into the spiced breadcrumb mixture, coating both sides. Set chicken strip down in the heated skillet and repeat with all chicken pieces until they're laying in a single layer (try not to overcrowd the pan because you want room to flip them).
Turn chicken strips over once golden on one side (3-4 minutes). Cook other side until golden, drizzle with honey, and serve while warm. Enjoy!
