
6 organic eggs
2 cups Oat milk (we use Elmhurst Milked)
2 tsp organic vanilla extract
6 tbsp organic coconut sugar
½ tsp cinnamon
¼ tsp nutmeg

Preheat oven to 350 F and line a muffin tin with the silicone baking cups. Break apart mini toasts into bite size pieces and put in large bowl

In a separate bowl, combine oat milk, eggs, vanilla, cinnamon, nutmeg, and sugar.

Pour mixture over bread and mix to cover

Pour batter into silicone baking cups and sprinkle tops with a pinch of cinnamon and sugar

Bake for 18-22 minutes, until baked through the center
