Have you tried overnight oats yet?? It’s the ultimate meal-prep breakfast that’s made the night before by just mixing some simple pantry items together in a mason jar and storing in the fridge. Made with sprouted rolled oats, protein-rich peanut butter, unsweetened cocoa powder, and chia seeds, this nutritious decadent breakfast is ready in the morning and is super kid-friendly!
½ cup almond milk Can substitute with any milk
½ cup Greek yogurtWe use coconut milk yogurt when dairy-free
3 tbsp unsweetened peanut butter
1 tbsp unsweetened cocoa powderCan use less if you prefer a milder flavor
1 tbsp chia seeds
2 tsp pure maple syrupCan use more if you prefer a sweeter flavor
1 tsp vanilla extract
Pinch of salt
Topping
Sprinkle of cacao nibs
Sprinkle of organic unsalted peanuts
Drizzle of peanut butter (can you tell we love peanut butter?? YUM)
1Pour oats into a mason jar and cover with milk. Add in the rest of the ingredients (except for the topping which will be added the next day).
2Stir to combine all ingredients so they're evenly dispersed and seal the jar with a lid. Taste the oats and adjust according to preference (we sometimes add more maple syrup to make it sweeter). Store in the refrigerator overnight.
3When ready to eat, sprinkle the top of the oat mixture with both the cacao nibs and peanuts. Finish by drizzling with peanut butter.

Hi! We buy sprouted oats from One Degree Organics but totally not necessary. I like them because they have some added nutrition and are easier to digest. That being said, rolled oats work just fine in this recipe!
