Cauliflower Latkes (Pancakes)

 16 oz riced cauliflower
 Avocado oil
 ½ cup onion, finely chopped
 ½ cup chickpea crumbs (or whole wheat breadcrumbs)
 1 tbsp parsley, minced
 2 sprigs thyme, leaves only
 2 eggs
 Salt, to taste
 Pepper, to taste
 Onion powder, to taste
 Garlic powder, to taste
 Paprika, to taste
 Applesauce, for garnish (optional)

Preheat oven to 450F. On a lined baking sheet, spread out the cauliflower rice and spritz with avocado oil. Roast for 20 minutes until moisture is eliminated. Set aside in a large bowl.

Heat a skillet and add avocado oil. Saute the onion until caramelized. Add to the bowl with the cauliflower rice. Let cool.

Stir in chickpea crumbs (or whole wheat breadcrumbs), parsley, thyme leaves, eggs, salt, pepper, onion powder, garlic powder, and paprika. Mix well.

In the same skillet used before, add avocado oil. Form little patties and put in saute pan, pressing down gently to flatten. Cook until golden and flip. Cook until golden on second side and lay on a paper-towel lined plate (to absorb oil). Repeat process for remaining batter.

Serve with applesauce for dipping. Enjoy!
