These cauliflower latkes are a great alternative to traditional Chanukah potato latkes! Loaded with fiber and B-vitamins from the cauliflower and high in protein from the chickpea crumbs, this is a lighter version of the classic that's also kid-friendly.

Preheat oven to 450F. On a lined baking sheet, spread out the cauliflower rice and spritz with avocado oil. Roast for 20 minutes until moisture is eliminated. Set aside in a large bowl.
Heat a skillet and add avocado oil. Sauté the onion until caramelized. Add in the minced garlic. Add to the bowl with the cauliflower rice. Let cool.
Stir in chickpea crumbs (or whole wheat breadcrumbs), parsley, thyme leaves, eggs, salt and pepper. Mix well.
In the same skillet used before, add avocado oil. Form little patties and put in saute pan, pressing down gently to flatten. Cook until golden and flip. Cook until golden on second side and lay on a paper-towel lined plate (to absorb oil). Repeat process for remaining batter.
Serve with applesauce for dipping. Enjoy!
