Rice Crispy Fudge Cups

This no-bake frozen dessert is such a favorite amongst my kids! The crispy brown rice cereal texture complements the contrasting smooth fudgy layer perfectly. Packed with protein from the seed/nut layer, it's a sweet treat that also has some nutritional benefits!

Rice Crisp Layer
 2 cups brown rice crisp cerealWe like using the 365 brand from Whole Foods since there's only 1g added sugars
 1 cup seed/nut butter
 ¼ cup pure maple syrupIf the seed/nut butter you are using is sweetened, then cut the pure maple syrup down to 1 tbsp or omit completely
 Pinch of sea salt
Chocolate Fudge Layer
 1 cup chocolate chips
 Pinch of sea salt

Line a muffin tin with silicone muffin liners.

Depending on how you want to layer your fudge cups, these steps will go in different orders. You can either have a) 3 layers with rice crisp, fudge, rice crisp (our favorite), or b) 3 layers with fudge, rice crisp, fudge or c) 2 layers with rice crisp and fudge

In a mixing bowl, combine the ingredients for your rice crisp layer. Take about 1 tbsp and flatten it completely in your silicone muffin liner.

In a small saucepan on low heat, combine your ingredients for your fudge later and mix until the chocolate is completely smooth. Take 1 tbsp of your fudge and spread it on top of your crisp layer. Freeze for 20 minutes until the chocolate hardens (if making the cups with 2 layers of chocolate, you will have to freeze the cups after each chocolate layer).

Once chocolate is frozen, add another layer of rice crisp and pat down. Freeze for another 20 minutes, and enjoy! Store leftovers in the freezer.
