Cooked quinoa is the trick here. It gives these energy bites a bit of chew that oats on their own never manage, and it stretches the peanut butter further so they are not quite as rich. No baking, no food processor, one bowl.
They set in the freezer in a couple of hours and keep there for weeks. This is what I hand over when someone announces they are starving fifteen minutes before dinner.

Line a baking sheet with parchment paper and set aside.
In a bowl, combine all ingredients and stir well.
Shape into round balls and place on parchment paper. Freeze for 2-3 hours and enjoy straight out of the freezer, allowing it to thaw for a few minutes to soften.

hi, are you supposed to cook the oats before?
Hi! The oats shouldn’t be cooked at all… we use sprouted rolled oats from One Degree Organics (we buy a huge bag from Costco). The only item that should be cooked beforehand is the quinoa! 😊
Thank you! we use the same oats. Really appreciate it!
My pleasure!
Hi how long will these last in the freezer?
Hi! We usually eat these pretty fast but the longest we’ve kept them in the freezer was about a month and they were still great! Hope that helps!
