Peanut Butter Acai Popsicles

This popsicle is the perfect refreshing summertime treat or even a make-ahead breakfast idea! Acai is rich in antioxidants, deliver healthy fats and fiber, and is low in sugar. These popsicles are creamy and rich from the acai/peanut butter mix, filled with nutritious banana, blueberry, and strawberry pieces, and dipped in sweet granola surrounded by chia and flaxseed.

 8 oz frozen acai bowl/packetWe used the Tattooed Chef Organic AÇAI Bowl that we get from Costco, but I linked the same brand on Amazon. You can use any frozen acai packets you can find.
 2 tbsp creamy peanut butter
 1 tbsp chopped strawberriesIf using the Tattooed Chef acai bowls, this is included in the bowl so omit this step
 1 tbsp chopped blueberriesIf using the Tattooed Chef acai bowls, this is included in the bowl so omit this step
 1 tbsp banana, chopped or mashed If using the Tattooed Chef acai bowls, this is included in the bowl so omit this step
Topping
 1 tbsp granolaIf using the Tattooed Chef acai bowls, this is included in the bowl's packet so omit this step
 ¼ tsp chia seedsIf using the Tattooed Chef acai bowls, this is included in the bowl's packet so omit this step
 ¼ tsp flaxseedIf using the Tattooed Chef acai bowls, this is included in the bowl's packet so omit this step
 ¼ tsp shredded coconutIf using the Tattooed Chef acai bowls, this is included in the bowl's packet so omit this step

Let the frozen acai thaw a bit so it's easy to mix with the other ingredients.

If using the Tattooed Chef bowls, just mix with peanut butter and half the topping (optional), and pour into a popsicle mold.

If using other acai packets, combine the thawed acai with the peanut butter and fruit. In a separate bowl, combine all topping ingredients. You can mix half into the popsicle batter, or use all as toppings once the popsicles are frozen. Pour into popsicle molds.

Freeze for 4 hours or overnight.

Take out of popsicle mold, drizzle peanut butter on the popsicle and at the tip. Dip the popsicle in remaining topping. Enjoy!
