20-25 Medjool dates, pitted
1 cup finely diced apples (1/2-1 apple)
½ cup chopped pecans
4 dried pitted dates
5 dried apricots
½ tsp pumpkin pie spice (combination of cinnamon, ginger, nutmeg, cloves)
2 tbsp almond flour
1 cup dark (or semi-sweet) chocolate chips, melted with 1/4 tsp coconut oil
1 cup dried fruit trail mix (for decorating)
3 tbsp almond butter, for drizzling

1 tbsp honey
2 tsp ground cinnamon (or more if desired)
Pinch of salt
½ cup walnuts, finely chopped
½ Granny Smith apple, finely chopped
1 cup dark (or semi-sweet) chocolate chips
1 tsp olive (or any) oil

1In a food processor, pulse together the apples, pecans, dates, apricots, spice, and almond flour until a sticky mixture forms. Line a baking tray with parchment paper. Add a tsp of the charoset mixture to each date. Dunk it into the melted chocolate and sprinkle with dried fruit/nut trail mix. Drizzle almond butter on top. Put in the refrigerator to set.

2In a small bowl, combine almond butter, honey, cinnamon and salt. Add chopped walnuts and apples and mix well. Add a spoonful of filling to each date and lay on a parchment lined baking sheet. Then melt chocolate chips with olive oil just until combined and drizzle over dates. Top with flakey salt and refrigerate to set.
