Looking for an easy kid-friendly side dish? Made with just 3 simple ingredients, these zucchini crisps take minimal prep time and are a great way to get in those vitamins, potassium, and fiber... so load up!

 2 medium zucchini
1 tbsp avocado oil plus more to spray the wire rack
 ¼ cup grated Parmesan cheese
¼ cup seasoned breadcrumbsIf gluten-free, can replace with almond flour
¼ tsp salt for sprinkling on zucchini to get rid of moisture
1

Preheat oven to 450F. Place a wire rack over a baking sheet and spray with avocado oil (using a wire rack will help keep the rounds crispy rather than soggy).

2

Slice the zucchini into 1/4" thick circles and sprinkle with salt. After 20 minutes, place the zucchini between paper towels and blot to get rid of excess moisture. In a bowl, toss the zucchini with the tbsp of avocado oil.

3

In a separate bowl, combine the cheese and breadcrumbs.

4

Dip each zucchini round in the breadcrumbs mixture, making sure each side is coated. Place each round on the wire rack. Bake for 25-30 minutes or until the rounds are crisp. Enjoy!
