Preheat oven to 350F. Line a muffin tin with silicone muffin liners.
In a large mixing bowl, combine all the wet ingredients.
Slowly add in the dry ingredients until just combined. Do not overmix or you will be left with a sinking muffin.
Pour batter into the muffin liners. Bake for 22-25 minutes or until a toothpick inserted in the center comes out clean. Enjoy!
