
In a large bowl, mix together all the ingredients and only 1 spoonful of marinara sauce. Shape into balls.
Add jar of marinara sauce to a large saucepan. Add in meatballs, and simmer in sauce for 3 hours under low flame, mixing carefully (as to not mush the meatballs) every half hour.
Once done, set aside.
Pound chicken to flatten, then season both sides with salt and pepper.
Heat a large skillet on medium heat. Add avocado oil.
Dip chicken into beaten eggs and then coat with bread crumbs.
Place chicken in skillet and cook on both sides until golden, about 5 minutes on each side.
Place each cutlet on a paper towel lined plate to absorb any extra oil
Place one chicken cutlet down on a plate.
Add meatballs and sauce on top and layer with another piece of chicken cutlet. Enjoy!
