A great hidden veggie recipe, these blender waffles have an entire cup of spinach! Potassium-rich banana and pure maple syrup sweeten these waffles, and except for the color, your kiddos will never even know the spinach is in there! Gluten-free (we use oat flour) and dairy-free, these waffles freeze well and are a great addition to your morning routine!

Grease and preheat a waffle maker.
In a food processor, combine all ingredients (except for the chocolate chips and avocado oil) until smooth. Using a food processor produces a pancake with specks of green rather than using a high speed blender which produces a pureed batter that's completely green. The flavor is milder when using a food processor, but we enjoy both ways!
Let batter rest for 10 minutes so the oat flour can absorb the liquid and thicken. Add chocolate chips.
Pour 1 cup of batter into the waffle maker. Close the lid, flip over, and set a timer for 4 minutes. Remove waffle with a rubber spatula and repeat for remaining batter. Enjoy!
