We love eating the rainbow so we decided to put a St. Paddyās Day spin on our apple slice ādonutsā. Topped with Greek yogurt and our rainbow fruit, you can also sub in nut butter or chocolate hummus for the spread. We then added some dye-free candy in the center for our pot of gold at the end of the rainbow.
We made these blender muffins in honor of St. Patrickās Day! These chocolate chip banana muffins are always a hit with the kids and their friends (and no one even complains that the beautiful green color comes from SPINACH!!). We love using spinach because it adds such great nutritional value without compromising the sweet flavor of the muffin.
