Now that summer is in full swing, we're all about BBQs and picnics. This veggie packed sesame noodle pasta salad is always such a hit whether I'm entertaining or bringing it over to a potluck. I find most sesame noodle marinades use peanut butter or soy sauce, but this one uses coco aminos instead so the dressing doesn't overpower the entire dish!
Sesame Noodles
8 oz soba noodles or whole wheat linguine
1 (10-oz) bag veggie slawOurs had green cabbage. red cabbage, & carrots
1 (10-oz) bag shredded carrots, but only use a quarter to a half of the bag
1 bell pepper, slices into thin strips
1 bunch green onions/scallions, chopped
½ cup cilantro, chopped
½ cup peanuts
½ cup chickpeas
2 tbsp sesame seeds, toasted
Marinade
3 cloves garlic, minced
3 tbsp safflower oil
3 tbsp rice vinegar
3 tbsp coco aminos
1 tbsp coconut sugar
1 tbsp sesame oil
1 tsp salt
1Cook the soba noodles according to the package, then drain and let cool in a serving bowl.
2In a small bowl, whisk together the marinade ingredients .
3Assemble your veggie noodle salad adding all the remaining ingredients to your noodles. Drizzle marinade over your noodles, toss to combine, and enjoy!
