Itโs apple season and we ๐ are ๐ here ๐ for ๐ it!! Nothing is more soothing than the warm spices of cinnamon, nutmeg, and clove mixed with the sweet flavors of apples. Great for a make-ahead breakfast or snack, these bars are vegan + gluten-free.

Preheat oven to 350F and line an 8x8 inch pan with parchment paper.
In a medium bowl, mix together almond flour, pure organic maple syrup, coconut oil, vanilla extract, and salt. Save about 1/4 of the dough for later and set aside. Press the remaining dough down into the bottom of the pan to create your crust layer.
Bake for 15 minutes or until golden brown, and let the crust cool off.
Into a small saucepan on medium low heat, add your apples (and berries if using them), orange juice, coconut sugar, coconut oil, cornstarch, cinnamon, and salt. Cook for 10 minutes until the water has evaporated. Add in vanilla extract and mix well.
Pour apple mixture over cooled crust. Crumble the remainder of your topping evenly over your apple filling and bake in oven for another 20 minutes.
Take your pan out of the oven and let it cool on the counter before cutting. Enjoy!
