My favorite veggie to sneak into the kids' lunches is spinach because its mild flavor is always masked by whatever it's combined with. My daughter LOVES grilled cheese and cheese quesadillas, so I always put spinach inside to get in extra nutrients. We've also made these quesadillas with scrambled cheesy eggs + spinach, and she always gobbles them up!

Start by chopping 1/2 cup spinach very finely. Set aside.
For our whole wheat spinach quesadillas, we start by using 1 tbsp avocado oil and warming it in a skillet. I then place the whole wheat tortilla in the pan, and flip it when it starts to create an air pocket bubble.
Add chopped spinach and 1/4 cup shredded cheese to your tortilla. Flip half of the wrap over, and let it melt the cheese. Take off skillet, cut into triangles, and enjoy!
