Spiced Apple Granola Cups

Let’s get all the Autumn feels together with these no-bake breakfast treats.

🍂 Crunchy granola combined with creamy nut butter forms our addicting cup’s base. Once frozen, we fill it with tart Greek yogurt topped with cinnamon coated cooked apples and a drizzle of sweet honey or pure maple syrup.

Crust
 3 cups Granola
  cup nut butter
Filling
 2 cups Greek yogurtIf vegan, we use coconut milk yogurt
 1 tbsp pure maple syrupOptional, depending on if you like your yogurt sweetened
Stewed Apples
 1 red apple, peeled, cored, and diced
 1 tbsp pure maple syrup
 1 ½ tsp coconut oil
 ½ tsp cinnamon
  tsp salt
 ¼ tsp vanilla extract
Optional toppings
 Drizzle of honey
 Sprinkle of cinnamon

Line a muffin tin with silicone liners. In a food processor, combine your granola and nut butter until a crumbly mixture forms. Press the batter into the liners/ bottoms and sides. Freeze for a half hour.

Into a small saucepan on medium low heat, add your coconut oil, apples, pure maple syrup, cinnamon, and salt. Cook for 10 minutes until soft. Add in vanilla extract and mix well.

Take your granola cups out of the freezer. Add a dollop of yogurt (optional mixed with maple syrup) and top with your cooked apples. Sprinkle with cinnamon + honey, and enjoy!
