
Wet Ingredients
½ cup pure maple syrup
½ cup pumpkin puree
2 tbsp liquid coconut oil
½ tsp salt
¾ tsp pumpkin pie spice
½ tsp vanilla extract
1 egg
Dry Ingredients
1 cup oats
½ tsp baking soda
Mix-Ins
⅓ cup raisins
Optional: pumpkin seeds sprinkled on top

Preheat oven to 350F. Line a muffin tin with silicone muffin liners.

In a food processor, add the wet ingredients and process until well combined.

Add in the dry ingredients and process again until smooth.

Fold in the raisins. Mix with a spoon and pour into the muffin liners. Top with pumpkin seeds if desired.

Bake for 20 minutes until a toothpick comes out clean. Let cool and enjoy!
