Pumpkin Pie Energy Bites

This no-bake energy ball is the perfect way to get your pumpkin spice fix this autumn! Gluten-free and vegan, these energy bites are great for an anytime-of-the-day snack and store well in the freezer to always have on hand. They take minutes to thaw and have all the fall feels... so satisfying!

Utensils Used
 Baking sheet
 Toothpick
 Parchment paper
Ingredients
 1 cup almond flourCan also sub with oat flour
 2 sheets graham crackers, crushed
  cup cashew butterCan sub almond butter
 ½ cup pumpkin puree
 6 tbsp pure maple syrup
 ¼ cup mini marshmallowsOptional
 1 tbsp pumpkin pie spiceFor homemade, use 1 tsp ground cinnamon, ¼ teaspoon ground nutmeg, ¼ teaspoon ground ginger, and ⅛ teaspoon ground cloves or Allspice
 1 tsp vanilla extract
 ¼ tsp salt
 Pretzel sticks

Line a baking sheet with parchment paper.

In a large bowl, combine all ingredients except the pretzel sticks.

Mix well until a batter forms. Using a cookie scoop or your hands, shape into balls and place on the parchment paper.

Take a toothpick and insert pumpkin lines around the pumpkin. Break a pretzel stick in half and insert it into the top of the "pumpkin". Store in the freezer, let it thaw a few minutes before serving, and enjoy!
