Peanut-Butter Banana Oatmeal Bake

🍰 Creamy and decadent, this oatmeal bake tastes like sweet cake! Naturally sweetened by ripe bananas + pure maple syrup and spiced with vanilla, cinnamon + nutmeg, it will be a favorite with your entire fam!
🌱 One of my favorite recipes on the site, it’s gluten-free, dairy-free, and packed with plant-based protein.

 2 cups sprouted oats
 1 tsp baking powder
 2 tsp cinnamon
 ½ tsp nutmeg
 2 tbsp flaxseedOptional... this ingredient can be omitted and is only added for extra fiber and omega-3 fatty acids
 ¼ tsp salt
 2 large bananas, mashed
 2 eggs
 1 ¾ cups unsweetened oat/almond milk
 ¾ cup peanut butter
 ½ cup maple syrup
 1 tsp vanilla extract

Preheat oven to 375F. Grease an 8x8 silicone baking dish with coconut oil.

In a large bowl, combine the sprouted oats, baking powder, cinnamon, nutmeg, flaxseed, and salt. Mix until evenly combined.

In a separate bowl, mash the bananas. Add in eggs and mix well. Add in peanut butter, milk, maple syrup, and vanilla extract.

Pour the wet ingredients into the dry oats and mix well.

Pour batter into prepared dish and bake for 35 min. Let cool and decorate with banana coins and extra peanut butter drizzle. Enjoy!
