Let’s make red, white, and blueberry banana pops for Memorial Day! Did you know that when frozen, bananas become creamy like ice cream? These pops are a healthy way to sneak in a fruit and couldn’t be easier to make. They’re also a great way to use up those bananas that have been sitting on your counter all week!

Ingredients
2 bananas (makes 4 pops)Should have some spots, but still be firm
½ cup white chocolate
¼ tsp liquid coconut oilThis makes the melted chocolate more spreadable
Strawberries, cut into strips for one batch and chopped for another
Blueberries, cut in half
1Line a baking sheet with parchment paper.
2Melt your white chocolate with coconut oil and stir well.
3Peel your bananas and cut in half. Dip a cake pop stick in the chocolate and push it through the bottom of the banana so half the stick remains for you to hold. Repeat for all banana halves and place on the parchment paper.
4Dunk your bananas in the chocolate or drizzle it on top. Spread the chocolate all over.
5Blot your fruit with a paper towel so they'll stick better to the chocolate. Decorate with any your fruit toppings, and freeze for 2+ hours. Enjoy!
