Maple Banana Oat Pancakes

 2 cups rolled oats
 1 banana
 2 eggs
 6 tbsp maple syrup
 2 tbsp almond milk
 1 tsp vanilla extract
 1 tsp cinnamon
 ¼ tsp salt
 Handful of spinach, optional
 2 tsp baking powder
 Avocado oil, for greasing pan

In a high speed blender, combine all ingredients (except avocado oil).

Let batter rest for 5 minutes to thicken.

Grease a non-stick pan with oil. Pour heaping spoonfuls of batter into the pan so they form round circles, and flip over once bubbles have formed and bottom is golden (Cook for about 2-3 minutes on one side. Turn over and cook for another 1-2 minutes.) Repeat until all pancakes are made. Enjoy!
