(Hidden Carrot) Chicken Strips

Looking for a way to hide veggies in your kids' meals? We've got you covered with these (Hidden Carrot) Chicken Strips! The great thing about hiding carrots is that the orange color blends right into the breadcrumb mixture. The carrots add a wonderful sweetness to the chicken that you can even supplement with a honey drizzle (or if your kids are honey addicts like mine, they can even use the honey as a dipping sauce rather than ketchup!)

1 lb boneless, skinless chicken breast, cut into strips
1 cup whole wheat breadcrumbsCan also substitute with panko
 ½ tsp garlic powder
 ½ tsp onion powder
 ½ tsp paprika
 ½ tsp parsley
 ½ tsp salt
 ½ cup carrots, grated
 2 large eggs
 Avocado oil, for frying
 1 tsp honey (optional)
1

In a bowl, add your eggs and beat lightly. Add in chicken strips to coat.

2

In a small bowl, combine breadcrumbs with all spices and grated carrots. Lay spice mixture out on a flat plate.

3

Heat a large skillet on low flame. Add avocado oil to coat.

4

Dip egg-battered chicken strips into the spiced breadcrumb mixture, coating both sides. Set chicken strip down in the heated skillet and repeat with all chicken pieces until they're laying in a single layer (try not to overcrowd the pan because you want room to flip them).

5

Turn chicken strips over once golden on one side (3-4 minutes). Cook other side until golden, drizzle with honey, and serve while warm. Enjoy!
