No-Bake Granola Bars

Have you ever looked at the ingredients in store-bought granola bars? Generally, there are around 15+ hard to pronounce ingredients and always a load of added refined sugars. Homemade is such a great option because besides tasting delicious, you can see the simple and clean ingredients going into the bars. Made with sprouted rolled oats, protein-rich natural peanut butter and sweetened by pure honey, these NO-BAKE bars will become your new favorite granola treats!

 1 cup creamy natural peanut butterCan substitute with sunflower seed butter if nut-free
 1 cup brown rice crisp cereal
 ½ cup honeyCan sub in agave nectar if vegan
  cup mini chocolate chips
 ½ cup raisins
 2 tbsp liquid coconut oil
 1 tsp pure vanilla extract
 ½ tsp sea salt

Line a 9×13 inch baking dish with parchment paper.

In a small saucepan on low flame, mix together the peanut butter, honey, liquid coconut oil, and vanilla extract until warm.

In a large mixing bowl, combine the warm peanut butter mixture with the oats, brown rice crisp cereal, raisins, and sea salt. Add in the chocolate chips last once the mixture has cooled so they stay solid.

Pour mixture into prepared baking dish and press down firmly into the pan. You can line the top with another piece of parchment paper and use a spatula to flatten.

Store in fridge for 2-4 hours, and then slice into bars. Enjoy! Store in the fridge or freezer, each bar separated from the next by parchment paper (allow bars to thaw for 20 min before eating from freezer).
