Gingerbread Energy Bites

‘Tis the season for all things sprinkled with cinnamon, nutmeg, ginger, and cloves! These no-bake energy bites taste like gingerbread cookies and pumpkin pie had a baby and are great for meal prep and perfect size for lunchboxes.

 1 ½ cups rolled oats
 1 cup almond butter
 ½ cup pumpkin puree
 ½ cup mini dark chocolate chips
 2 sheets graham crackers
 6 tbsp pure maple syrup
 ¼ cup chia seeds
 1 tbsp pumpkin pie spice
 1 tsp vanilla extract

In a large bowl, mix all ingredients together. Roll into balls, and enjoy!
