Funfetti Cake Batter Bites (No Bake)

An easy snack activity to make with the kids, these NO-BAKE energy bites taste like cookie dough but are made with clean ingredients like gluten-free oats, superfood seeds (flax, chia, and hemp), nut butter, and pure maple syrup.

Great for fine motor skills (the kids LOVE rolling the batter into little balls), it’s also a great confidence booster for kids to create their own snacks from start to finish.

 ½ cup cashew butter
  cup sprouted oats
 1 tsp hemp seeds
 1 tsp chia seeds
 1 tsp ground flaxseed
 ½ tsp vanilla extract
  tsp salt
1

Add all ingredients to a large bowl and mix together until well combined.

2

Place batter in the fridge for 30 minutes so it's easier to roll.

3

Roll into balls (if too sticky, I find it's helpful to roll with sightly wet hands).

4

Can eat right away, or store in fridge (my personal preference so that the balls harden a bit) or freezer (and can eat without defrosting!). Enjoy!
