Frozen Yogurt Bark

Frozen yogurt bark is a great healthy snack option or breakfast all year-round. Perfect for baby-led weaning, toddlers, kids, and adults alike, this no-bake frozen treat is enjoyed straight out of the freezer. Protein packed Greek yogurt (coconut milk yogurt also works if vegan) is naturally sweetened with honey or pure maple syrup and then mixed in with nutritious fresh fruit! The best part is that this treat is such a fun snack activity where children can let their imaginations run wild... there are endless flavor options depending on what toppings you want to add to the yogurt mixture!

 2 cups full fat Greek yogurtCan sub in coconut milk yogurt if dairy-free
 ¼ cup honey/pure maple syrup
 ¾ tsp pure vanilla extract
 Pinch of salt
Optional toppings/Mix-ins
 Cut-up strawberries
 Cut-up raspberries
 Cut-up blueberries
 Banana slices
 Mini chocolate chips
 Melted chocolate drizzled across
 Peanut butter drizzled across
 Granola
 Crumbled up cookies
 Shredded coconut
 Raisins

In a large bowl, mix the yogurt, honey/maple syrup, pure vanilla extract, and pinch of salt together. You can either mix in the add-ins now, or put them on top. We prefer to do both!

Line a rimmed baking sheet (or any 10" x 15" baking dish) with parchment paper. Pour the yogurt mixture on top and spread evenly with a rubber spatula. Sprinkle with toppings.

Place in freezer for 3-4 hours (we even do overnight) until completely hardened.

Remove from freezer and use a sharp knife to cut the bark into pieces. Store remainder in freezer bags immediately so they don't stick together. These snacks will thaw if put in the refrigerator or left out at room temp, so be sure to eat straight from the freezer. Enjoy!
