Crispy Smashed Dill Potatoes

The perfect side dish that's so simple to make, yet produces such mouth-watering flavor. Roasted potatoes, caramelized onions, and aromatic dill come together to create a dish that's loaded with fiber, B-vitamins, iron, and potassium.

 3 lbs red potatoes
 1 onion, sliced
 ½ cup fresh dill, washed and chopped fine, half reserved
 ¾ tsp extra virgin olive oil per potato, plus more to coat the bottom of the pan
 1 tsp sea salt
 1 tsp garlic powder
 ¼ tsp pepper

Preheat oven to 450F. Grease your baking tray with olive oil.

In a large pot, bring water to a boil. Add in potatoes (and a sprinkle of salt) and cook 15-20 min. Drain water. Pat the potatoes dry.

Once cooled off, take each potato and line them on the baking sheet. Use a potato masher or the bottom of a glass/hard cup to smash each potato. Sprinkle the sliced onions around the potatoes.

Drizzle olive oil over each potato and onion slice and season with salt, garlic powder, pepper, and 1/4 cup dill.

Bake for 20 minutes. Flip the potatoes, and bake for another 20 minutes. When out of the oven, sprinkle with extra sea salt and 1/4 cup fresh dill. Enjoy!
