Citrus Herb Quinoa Salad

Quinoa is one of our favorite grains to meal prep because it's a great source of plant protein, is gluten free, high in fiber, and contains loads of vitamins. It's also super easy to meal prep + freeze! This meal combines healthy fats from creamy avocado, the aromatic fresh flavors of dill, salty feta, cool + crisp cucumbers, and sweet tomatoes in this wow-factor salad.

Quinoa Salad Ingredients
 1 cup uncooked quinoa, rinsed
 2 cups water
 4 oz crumbled feta cheese
 1 avocado, pit removed and cut into cubes
 1 medium cucumber, chopped
 1 cup cherry tomatoes, sliced
 1 cup fresh dill, finely chopped
Lemon Vinaigrette
  cup lemon juice (from 2-3 lemons)
 ¼ cup extra virgin olive oil
 1 tsp fine sea salt

In a medium pot, combine 1 cup of quinoa with 2 cups of water. Bring to a rolling boil. Reduce heat, cover and simmer until liquid has evaporated (about 15 minutes). Let it stand for 5 minutes or so, then set aside to cool off.

In a small bowl, whisk together your vinaigrette ingredients until well combined. Set aside.

In a large bowl, add your crumbled feta, cubed avocado, chopped cucumbers, sliced tomatoes, and dill. When the quinoa has cooled off, add it to the bowl.

When ready to serve, pour dressing on the quinoa salad. Toss to combine and enjoy!
