Chickpea Feta Patties

 1 (15 oz) can chickpeas, rinsed and drained
 1 onion
 ½ cup mixed vegetables (we did a medley of cooked peas, carrots, and string beans)
 2 slices whole wheat bread
 1 cup shredded cheese
 ¼ cup feta, chopped into small pieces
 3 eggs
 ½ tsp sea salt (we used Borsari original blend of fresh herbs and spices infused into sea salt)
 ¼ tsp garlic powder
 ¼ tsp onion powder
 ¼ tsp paprika
 1/4 - 1/2 cup whole wheat pastry flour
 Optional: avocado oil, for frying, or use an air fryer without the oil

In a food processor, add the chickpeas, onion, vegetables (unless you want a chunkier patty with more texture, then add this later), and whole wheat bread.

Pour mixture into a large bowl and add in 2 types of cheese, eggs, seasoning, and flour. Once mixed together, this should create a batter that's not too runny.

To cook, you can either line an air fryer basket with tin foil and use a spoon to create patties on the foil. Cook at 375F for 20 minutes, flipping halfway. Otherwise, you can add oil to a skillet on medium-low heat and fry the patties on both sides til golden brown. Enjoy!
