Cheesy Zucchini Oat Pancakes

 2 cups shredded zucchini (or one very large zucchini)Once shredded, wring out with a cheese cloth to get out all excess moisture
 2 eggs
 1 cup shredded cheddar cheese
 ½ cup oats, ground into flour in the blender/food processorOptional substitute: whole wheat breadcrumbs or panko
 1 ½ tsp veggie blend seasoning
 ½ tsp garlic powder
 ½ tsp fine salt

In a large bowl, combine all ingredients and mix well.

Heat a large skillet on medium-low flame. Add avocado oil and fry up little batches of the batter. Place on a paper towel lined plate and repeat process until entire batter is cooked. Enjoy!
