Caramelized Onion and Herb Chicken Patties

A take on my mother-in-law's traditional Kuku Sabzi, a Persian Herb Frittata. A great way to sneak in veggies, too with a portion of spinach!

 1 lb ground chicken Ground turkey works well, too
 2 large onions, grated
 ¾ bunch parsley, washed and chopped finely
 ½ cup spinach, chopped finely (optional)
 2 tsp salt
 1 tsp pepper
 1 egg
 Avocado oil, for frying

Heat a large skillet on medium-low flame. Add avocado oil. Stir in grated onions and saute until golden brown.

Put onions in a large bowl. Add in rest of ingredients.

In the same skillet, heat again and add oil. Form patties with your batter and fry each side until golden brown. Enjoy!

  1. Hi! This sounds so good! I’m going to make it for dinner tonight. I love spinach but my husband does not. Wonder what would be a good substitute? Broccoli maybe? Probably would not taste as good though. 🤔

      1. Hi!! I’m so sorry I didn’t respond sooner… today we traveled back from vacation so it was a hectic one! So glad you ended up successfully sneaking in the spinach… I’ve tried that move on my husband + kids plenty of times 🤣. As another option, kale works too but has a slightly more bitter taste. I often leave the spinach out altogether and that works also! Glad you enjoyed it!

  2. This looks delicious. Can you bake the chicken patties instead of frying them? Probably won’t taste as good…

    1. Hi! Yes, we’ve baked them before too, but as you guessed it, the flavor is definitely not as delicious as when it’s fried. Baking is definitely a healthier option though!
