Blender Banana Spinach Pancakes

Did you know that spinach is one of the most zinc-rich veggies? Zinc is important for many bodily functions such as strengthening your immune system (helping you fight a cold) + aiding in wound healing (for all those bruised knees).

šŸƒ These pancakes are made with clean simple ingredients like oats, spinach + bananas, and come together quickly in a blender. Not feelin that spinach?? Don’t worry! You can’t even taste it… the result is sweet caramelized banana pancakes (that happen to have green specks in them šŸ˜‰)

 2 ½ cups rolled oats, divided
 1 cup spinach
 2 bananas
 2 eggs
 Ā½ cup milk
 Ā¼ cup + 2 tbsp pure maple syrup
 Ā¼ cup +2 tbsp liquid coconut oil
 2 tsp baking powder
 1 tsp vanilla extract
 1 tsp cinnamon
 Ā¼ tsp salt
 Avocado oil, for greasing pan

In a food processor, combine 2 cups oats with the rest of the ingredients (except for the remaining 1/2 cup oats, chocolate chips and avocado oil) until smooth. Using a food processor produces a pancake with specks of green rather than using a high speed blender which produces a pureed batter that's completely green. We like the flavor better when using a food processor!

Add in 1/2 cup oats and mix with a spoon. Let batter rest for 10 minutes so the oat flour can absorb the liquid and thicken. Add chocolate chips.

Grease a non-stick pan with avocado oil. Pour heaping spoonfuls of batter into the pan so they form round circles, and flip over once bubbles have formed and bottom is golden (Cook for about 2-3 minutes on one side. Turn over and cook for another 1-2 minutes.) Repeat until all pancakes are made. Enjoy!
