Ingredients
1 cup quinoa (makes about 2 cups cooked)
Vegetable broth (or water) to cook the quinoa
1 cup chopped spinach
½ cup marinara sauce
2 eggs
2 egg whites
1 cup shredded mozzarella cheese
1 tsp oregano
1 tsp garlic powder
⅓ tsp salt
⅛ tsp ground pepper
Shredded Parmesan cheese for sprinkling on top

Cook quinoa and broth according to package directions.

Preheat oven to 400F. Line a muffin tray with silicone liners.

In a large bowl, mix the cooked quinoa with all the other ingredients. Sprinkle the Parmesan cheese on top.

Fill the 12 muffin liners with the quinoa mixture.

Bake for 15-20 minutes or until the edges start to turn golden.

Let the muffins cool in the muffin liners otherwise they will fall apart when removed (I speak from experience!). Remove from liners and enjoy!
