Cheddar Broccoli Quinoa Muffins

These kid-friendly vegetarian quinoa bites can be made three ways: baking in a muffin tin, frying into patties, or using an ebelskiver pan to make round balls (view all options in the photo gallery at the bottom of the recipe page). Either way, the end result is a delicious, protein-, veggie-, and calcium-packed meal that will have the kids coming back for more!

 2 cups cooked quinoa
 2 eggs
 2 garlic cloves, minced
 2 cups shredded cheddar cheese
 1 cup chopped broccoli
 ½ tsp veggie blend seasoning
 ½ tsp salt
 ½ tsp garlic powder

 Ebelskiver panIf you want the tots perfectly circular like ours, you can use this non-stick pan. Also perfect for fluffy pancakes!

In a large bowl, mix all ingredients together.

Cooking method 1: Oven to bake into muffins
Preheat oven to 350F. Spoon mixture into each cup of a silicone mini muffin pan (no need to grease it if it's silicone). Bake for 15-20 min, or until golden on top.

Cooking method 2: Frying pan to make fritters
Heat a large non-stick skillet. Put in 2 tbsp avocado oil. Put large spoonfuls of the mixture into the pan, shaping as a patty. Flip when golden. Let the second side brown, and place on a paper towel lined plate to absorb excess oil.

Cooking method 3: Ebelskiver pan to make tots
Heat a non-stick large Ebelskiver pan. Grease each circular spot with avocado oil. Put large spoonfuls of the mixture into the pan. Using tongs, turn when golden. Let the second side brown, and place on a paper towel lined plate to absorb excess oil.
