These no-bake carrot cake energy bites are perfect for summer since they require no oven or stove! They taste just like creamy carrot cake but are refined-sugar free and gluten-free. We love storing them in the freezer for a refreshing treat anytime. This recipe is great for kids, as they can measure, pour, mix, and roll the batter into balls, making it the perfect blend of snack and activity.
Energy Bites Batter
1 cup rolled oats
1 cup shredded carrots
½ cup almond butter
¼ cup pure maple syrup
¼ cup cream cheese
¼ cup raisins
1 tsp vanilla extract
1 ½ tsp pumpkin pie spice (alternatively, you can create your own with 1 tsp cinnamon, 1/4 tsp nutmeg, and 1/4 tsp ground ginger)
Pinch of salt
Chocolate Glaze
12 oz white chocolate chips
2 tsp coconut oil
1In a large bowl, combine the energy bites batter ingredients and mix well.
2Line a baking sheet with parchment paper. Using slightly wet hands (so the batter doesn't stick to you), form the mixture int small balls, about 1 inch in diameter. Place them on the parchment-lined baking sheet.
3Place the energy bites in the freezer for 15 minutes.
4In a double-broiler pot, heat your chocolate mixed with coconut oil (the coconut oil makes it melt more smoothly). Stir to ensure it's not burning, and remove from heat.
5Dip your energy bites into the melted chocolate and place back on the parchment paper. Allow the glaze to set by putting back in the freezer for another 15 minutes. Store in freezer, and enjoy!
