Baked Feta Pasta

Inspired by the original creator of the Baked Feta Pasta dish, @liemessa, and @grilledcheesesocial who had her version go viral on Tiktok, this dish is incredibly creamy, flavorful, and easy to make. You basically take a block of feta cheese, cover it with some oil and spices, bake it with tomatoes & spinach, combine it with pasta, and voila, you're done! It tastes like a decadent 5-star restaurant quality pasta dish without all the hard work. Give this viral trend a try!

 1 8-oz block of feta cheese (we got a 2 pack from @costco)
 1 8-oz box whole wheat pasta
 2 pints cherry tomatoes
 ¾ cup spinach, chopped finely (optional)
 ½ cup extra virgin olive oil

 1/2 teaspoon sea salt
 ¼ teaspoon black pepper
 3 garlic cloves minced
 ¼ cup chopped fresh basil (we used our dried basil we picked from the garden last summer)

Preheat oven to 400 F.

Place tomatoes and spinach in an oven safe tray and drizzle with olive oil, salt, and pepper. Toss to combine.

Place the feta block in the bottle of the tray and flip a few times to coat in the oil.

Bake for 40 minutes until tomatoes are blistered and cheese is soft.

While the cheese is baking, make pasta according to package directions.

Combine drained pasta into the tray with the cheese and tomatoes. Add in garlic and basil. Toss well so all the sauce is evenly distributed on the pasta. Drizzle with honey and enjoy!
