Inspired by @eatingbyelaine, we make this vegan and gluten-free kid friendly recipe weekly but add a bit of cinnamon + maple sweetness to it! With only 3 main ingredients (sweet potatoes, quinoa, and oats), Elaine’s recipe is a wonderful savory option but over here, we’re generally team sweet! 🍁
Elaine's Original Recipe

1 cup cooked quinoa
1 cup oats, ground into flour in the blender
1 cup cooked sweet potato, skin removed and mashed
2 tbsp pure maple syrup, plus extra for drizzling on at the end
1 tsp cinnamon
1 tsp sea salt, plus extra for sprinkling on at the end
2 tbsp avocado oil
1Mix all ingredients together in a large bowl.
2Rolling the batter in your hands, form mini tater tots and set aside.
3Heat a non stick skillet on medium low flame. Add avocado oil.
4Place your tots on the skillet and cook for 5 minutes per side, or until golden. Flip and cook for another 5 minutes.
5Place tots on a paper towel lined plate.
6Sprinkle with sea salt and drizzle some extra maple syrup on top. Enjoy!
