Passover Locust Cookies

Low-key lo-custs for Passover! These cookies are the cutest way to explain the biblical plagues to your littles (or even to just celebrate nature and all of its creatures!) Gluten-free and dairy-free!

Cookies
 2 cups almond flour
 ½ tsp baking powder
 ¼ cup butter, softened
 ¼ cup pure maple syrup
 1 tsp vanilla extract
 ¼ cup chocolate chips
Decorating
 ¼ cup white chocolate, melted with 1/4 tsp coconut oil
 Dates
 Pecans
 Passover pretzel sticks
 Mini chocolate chips

Preheat oven to 350F. Line a baking sheet with parchment paper.

In a large mixing bowl, add the almond flour and baking powder and mix well. Toss in the softened butter, pure maple syrup, vanilla, and chocolate chips. Mix until well combined.

Using a cookie scoop, form cookie balls on the baking tray and smush down with a spatula and your fingers, creating a round cookie shape.

Bake for 10-20 minutes until the edges are golden. Let them cool.

Take your melted white chocolate and spoon about 1 tsp on each cookie. Immediately place a date on the chocolate. Place a dab of white chocolate on the front of the date to glue down your pecan. Add white chocolate dabs for eyes on the pecan and place 2 mini chocolate chips. Break 2 pretzels in half and position them on the side of the date as legs, pressing them into the cookie. Enjoy!
