 1 cup white chocolate chipsMelt with ½ tsp coconut oil
 Mini chocolate chips
 Dried mango, torn into little pieces
 Pretzel sticks, broken in half
 Fruit rolls, cut into 1" pieces
 ¼ cup milk/semi-sweet/dark chocolate chipsMelt with 1/8 tsp coconut oil

Line a baking sheet with parchment paper. Take your Gingerbread Energy Bites and line them up 3 in a row and insert a cake pop stick through the middle of them until it reaches the top ball without going through the top.

Dip your cake pop stick into the melted white chocolate. Decorate with pretzel arms, mini chocolate chip eyes and buttons, a mango nose, and apply a dotted smile with a toothpick inserted into the melted milk chocolate. Add a scarf by placing one fruit roll strip one way, and then dip another into chocolate and criss-cross it over the first one.

Place in the freezer for 10+ minutes, and enjoy!
