These apple muffins are a great make-ahead snack or breakfast option for both kids and adults alike, and are a great way to use all your autumn apples! Made with nutritious apples, whole wheat pastry flour, and oats, these muffins are made fluffy with protein-rich Greek yogurt!
1medium sized apple, diced (if you prefer your apple muffins smooth without chunks of apple, then grate this as well instead of chopping)
¾ cup sprouted oats
¾ cup Greek yogurt (for dairy free, we've used coconut yogurt and it came out great)
⅓cupapplesauce
⅓cuppure maple syrup or honey
⅓ cup liquid coconut oil
¼ cup all purpose white flour
2 eggs
2 tsp vanilla extract
1 ½tspcinnamon
½ tsp baking soda
½ tsp sea salt
Maple or coconut sugar, for sprinkling on top

Maple cream for spreading (optional)

Preheat oven to 400F and line a muffin tin with silicone muffin liners

In a large bowl, combine the flours, oats, cinnamon, baking soda, and salt.

In a small bowl, mix together the apples, yogurt, apple sauce, maple syrup, coconut oil, eggs, and vanilla extract.

Pour the wet ingredients into the dry, and mix together until just combined (over-mixing will result in a drier muffin). Sprinkle the tops with some maple or coconut sugar.

Pour into tins and bake for 23 minutes until center is cooked through.

Once cooled, top with optional maple cream and drizzle with honey. Enjoy!
